Tasty Avocado Tacos

Fresh, tasty avocado tacos can be made in a flash and with little hassle! There’s nothing better than making a delicious, filling meal in a short amount of time. In fact, you can make this entire dish in right around half an hour! The best part is, it’s inexpensive to grab the simple ingredients! Let’s talk avocado tacos!

Tasty Avocado Tacos


What You’ll Need

  • 4 ripe avocados
  • 1 zucchini
  • 4 tortillas
  • 1 small onion
  • 1 medium tomato
  • 1/2 head of lettuce
  • 1 cup shredded Mexican cheese
  • 1/2 cup of chipotle mayo
  • Cilantro for topping

How to Make

Start by cutting the avocados open (carefully!) and discarding the pits. Carefully remove the meat from the skin and then slice them into small pieces. While you’re doing this, dice the onion, tomato and zucchini. Once all the produce is diced and ready, set the mix in a bowl and put it to one side.

Once you’ve got that together, lay out the tortillas and spread the chipotle mayo evenly on the inside. Then, shred the lettuce into thin strips. Once the lettuce is shredded, add it and the Mexican cheese to the bowl.

Now you’ve got a big bowl full of delicious taco mix! Just go ahead and scoop out a quarter of the mixture into each tortilla! Then, fold the tortillas over and top them with cilantro to taste. If you don’t like cilantro, that’s okay, it’s just an added garnish! Serve the tacos room temperature and with your desired sides and drinks!

If you’re looking to make a full meal of it, you’ve got some great options! Refried beans are a great side to serve with this dish, as is Mexican rice. If you’re feeling particularly hospitable, you could serve tortilla chips and queso dip as an appetizer before bringing out the tacos! As for drinks, you can’t go wrong pairing Mexican food with margaritas! If you’re in the mood for something more laid back, Mexican beer with lime garnish is an excellent companion drink, too!
