Thai curry isn’t a terribly well-know dish in the West, and that’s a shame. It’s sweet and filling and delicious, and it’s really hard to beat. When you’re in the mood for Thai curry, no other dish will really hit the spot. So, here’s our favorite sweet Thai curry recipe for you to try!
Sweet Thai Curry Recipe
What You’ll Need
- 4 tablespoons of organic coconut oil
- 3 onions, chopped
- 3 green bell peppers, chopped
- 4 1/2 pound sweet potatoes
- 3 tablespoons of Thai red curry paste
- 3 tablespoons of minced fresh ginger
- 2 minced garlic cloves
- A can of unsweetened coconut milk
- 4 tablespoons of fresh lime juice
How to Make
Start by peeling the sweet potatoes and slicing them into one-and-a-half inch wide slices. Next, get a large saucepan and add the coconut oil. Heat it over high heat, and then add the peppers and onions. Turn the heat down to medium as you add the veggies and stir them a bit. In about twelve minutes they should be getting tender, at which point you can add the curry paste.
Cook the curry paste for about three or four minutes, and then ad the garlic and ginger. Cook for another minute or so, and then add the sweet potatoes and two-and-a-half quarts of water. Bring the soup to a simmer and let it cook until the potatoes are getting tender. This should take around half an hour.
Once the potatoes are tender, take the soup off the heat and add the lime juice and coconut milk. Next, puree the soup in batches so that it becomes smooth. Once smooth, the soup can be served! Serve the soup hot and don’t forget to pair it with something tasty! We recommend a side of sticky rice that can be mixed into the soup in the traditional Thai style. This helps the soup become more filling and tastes great, too!
