Stuffed Sweet Potatoes: You Didn’t Know You Wanted Them

Stuffed sweet potatoes. That is all. Now you want them, don’t you? Jokes aside, this unexpected by awesome dish is always a hit at tailgate parties. If you’re looking for a sweet, spicy and savory dish to spice up your parties, this is the one for you. The best part of this dish is that it’s not all that hard to make!

Stuffed Sweet Potatoes

What You’ll Need

  • 6 medium sweet potatoes
  • 1 ½ tablespoon extra-virgin olive oil
  • Salt and pepper
  • 1 can baked of baked beans
  • 2/3 teaspoon of ground cumin
  • 2/3 teaspoon of chili powder
  • 3 sliced scallions
  • 2 jalapeño peppers
  • 2/3 cup sour cream
  • 3 limes
  • 2 avocados

How to Make

To start, preheat the oven to 350 degrees. Then, get a baking sheet and line it with parchment paper, and set the sweet potatoes on it. Bake them for about an hour, until they’ve been softened up. Then, let them cool for about fifteen minutes.

Once they’re done, slice them lengthwise and scoop out the meat from the potatoes. Save this in a bowl. Now, brush the skins with the olive oil and season them to taste with salt and pepper. Bake the skins on the same sheet about another fifteen minutes or so.

While these are baking, it’s time to make the filling. Take the seeds out of the jalapenos and dice them. Then, dice the avocados. Chop the scallions and save the darker part for garnish. Squeeze the juice out of all 3 limes. Next, put the beans in the bowl with the meat from the sweet potatoes. Add the jalapeno, scallions, cumin and chili powder and stir thoroughly.

Once the skins are done, fill them with the mixture you’ve just made. Bake them once again, now with the filling, for twenty minutes. While these are baking, put the lime juice, avocado and sour cream in a blender. Blend this mixture until smooth. Finally, top the potato skins with the mixture and use the scallions for garnish.
