Spicy Zucchini Capellini Recipe

Spicy Zucchini Capellini Recipe

What You’ll Need

1 large zucchini

4 tablespoons of olive oil

1 clove of garlic

Grated Parmesan

1/2 teaspoon red pepper flakes

2/3 pound of capellini


1/4 cup of basil

1 Can of whole tomatoes

How to Make

First, get a large pan and heat the olive oil in it. Toss the red pepper flakes and the garlic into the mix and cook for a little over a minute. You’re looking for the garlic to start to brown a bit. Open the can of tomatoes and crush them into the pan, then add the juice from the can. Add some salt, about half a teaspoon, and let the sauce start to simmer. You want it to be somewhat thick, so let it simmer for about 15 minutes.

While this is heating up, go ahead and cut the zucchini into smaller chunks. Once that’s done, add the zucchini to the heated sauce and cook it for about five more minutes.

While all of this is happening, bring a pot of salted water up to boiling. Add the capellini and cook it according to the packaging. One that’s done, drain it with a colander and put it in a big bowl. Add the sauce to the bowl and toss it well, making sure the pasta is well-coated. Once that’s done, divvy it up into bowls and top with the parmesan cheese! Serve with a sweet white wine for best results.

This should make about 5 or 6 servings. Feel free to increase the recipe to make more for a larger group! Alternatively, don’t be afraid to tweak the seasonings if it’s a little too spicy for you. Or, if you’d like, turn up the heat if you like a spicier meal!
