Soy Maple Salmon Recipe

What You’ll Need

  • Head of cauliflower
  • Salt and Pepper
  • 1 tablespoon of soy sauce
  • 1 tablespoon of maple syrup
  • 2 cloves of smashed garlic
  • 1/2 tablespoon of orange juice
  • 1/2 tablespoon of olive oil
  • 1 tablespoon of dried cranberries
  • 2 5-ounce salmon filets, center cut
  • 1 tablespoons chopped pistachios or almonds
  • 1/2 teaspoon of orange zest
  • Cooking spray
  • 1 tablespoon of chopped parsley

How to Make

First, get the oven preheating to 400 degrees. While it’s heating up, get a large bowl and mix together the maple syrup, orange juice, a tablespoon of water, one of the smashed garlic cloves and soy sauce. Once it’s well-mixed, put the salmon filets in, cover the bowl and put it in the fridge. Give them about twenty minutes to get soaked.

While the fish is soaking, and the oven is heating, take the head of cauliflower and cut florets from it. You’ll want about two cups of florets. Put the florets in a medium microwavable bowl and microwave them for about three or four minutes.

Get a baking sheet and coat in with your preferred cooking spray. The fish should be ready, so drain the bowl with the salmon and then season them to your preference with salt and pepper. Set the broth aside, we’ll be using it later! Next, put them on the prepared baking sheet and bake them for about ten minutes. Keep an eye on them: you just want them turning slightly golden brown at the edges.

While the fish is baking, get a medium pan and add the olive oil. Heat the olive oil over high heat, then turn it to medium and add the remaining crushed garlic clove. Cook the garlic for about two minutes and then add the broth, cauliflower florets, pistachios, orange zest, cranberries, salt and pepper and parsley. Stir the mixture well and make sure it’s heated through.

Once the fish and the broth mix are both done, serve and enjoy! Feel free to increase the portion size: the portions given are for two plates.
