There’s nothing quite like getting up early in the morning and making a tasty breakfast for the family. Breakfast is the most important meal of the day, after all, and you should treat it as such!
This dish is fast, filling and delicious, and will start your day off right. Get ready to tackle you day with this scrambled eggs and smoked salmon dish! The proportions here are enough to serve three people, give or take.
Scrambled Eggs and Smoked Salmon
What You’ll Need
- 6 eggs
- 1/8 pound of sliced smoked salmon
- 1/4 cup of milk/almond milk
- 1 tablespoon of butter
- 6 blades of freshly chopped chives
- 6 slices of sourdough bread
How to Make
Chop the salmon into very small, bite-sized little pieces. Set a bit aside to use as a garnish later!
Preheat a medium non-stick pan, melting the tablespoon of butter. Crack the eggs into a bowl and add the milk. Whisk the mixture well, adding half of the chives to the mix. Season to preference with salt and pepper at this stage.
Scramble the eggs with a spatula, but don’t cook them to the point of dryness. When they’re coming together but retain some wetness, mix in the chopped salmon. This part is a little tricky, but if you do it right, this dish will taste delicious!
While you’re working on the eggs, go ahead and start popping the sourdough bread into the toaster. Let them stay in just long enough to brown! Top with apple butter or butter to taste. Once the eggs and toast are both done, top the toast pieces with the egg and salmon mixture. Garnish the individual pieces with the remaining chives and salmon.
Once you’ve assembled the breakfast, serve it warm to hungry family or friends! If you’re looking to make a meal of it, serve alongside a plate of hash browns or grits. If you’re making a brunch of this meal, mimosas are a perfect drink pairing. Enjoy!
