Quick and Easy: Salmon Cakes and Salad

When you’re trying to keep up with everything going on in your busy week, it can be easy to get overwhelmed. If you’re anything like us, you love quick and easy meals. The only thing better than an easy-to-make meal is a healthy one!

Well, the good news for you is that we have just the thing. This is our fast, fun and easy salmon cakes and salad recipe! It takes just over half an hour to make, and it tastes great! Let’s get into the recipe!

Salmon Cakes and Salad

What You’ll Need

  • 1 cup of corn
  • 1 large egg
  • 3 8 ounce cans of salmon
  • 1/2 cup breadcrumbs
  • 4 tablespoons of tartar sauce
  • 1 tablespoon of roasted red peppers
  • 1/2 tablespoon of fresh parsley
  • 7 ounces of mixed greens
  • 1 lemon
  • 3 tablespoons of olive oil

How to Make

Start by preheating your oven to 400 degrees! Next, beat the large egg in a bowl. After that, cut the lemon into wedges and set half of it aside. Juice the half you don’t set aside and zest the peel. Mix the corn, salmon and 3 tablespoons of the breadcrumbs and 2 tablespoons of the tartar sauce into the bowl. Mix this up a bit.

Add the lemon zest, red peppers and parsley, and then mix again. Make sure your hand is clean and form this into eight patties. Set the patties on a tray in the freezer for 4-6 minutes, allowing them to firm.

While that’s firming, get a medium bowl out to make the dressing. Add the lemon juice, a tablespoon of water and the remaining tartar sauce to the bowl. Season with pepper to taste, and whisk it into a dressing!

Nor that the patties are firm, we can bread them. Get a short bowl and put the rest of the breadcrumbs in it. Roll the patties in the breadcrumbs to cover them thoroughly. Get a large, non-stick pan and heat the olive oil in it. Cook the cakes for about 3 ½ minutes, until they are browned. Once they’re brown on both sides, put the skillet in the oven and let them cook for about 7 more minutes.

Finally, while these are cooking, making the salad. Add the greens to the bowl that has our dressing. Toss the bowl thoroughly, letting them get coated. Once the cakes are done, serve them with the salad and som tartar sauce! Garnish them with the lemon wedges. Bon appetite!
