What You’ll Need

  • 1 medium sugar pumpkin
  • 1 tablespoon of vegetable oil
  • 3 tablespoons honey
  • 1/4 cup apple cider
  • 1/3 cup light brown sugar
  • 3/4 teaspoon of ground cinnamon
  • 1 teaspoon of apple cider vinegar
  • 1/2 teaspoon of ground ginger
  • Pinch of ground cloves
  • Salt
  • 1/4 teaspoon of fresh nutmeg

How to Make

Start by stemming, halving and seeding the pumpkin. After that, get the oven preheated to 350 degrees. Use the oil to brush the sides of the cut pumpkin. Then, get a baking sheet and line it with parchment. Set the pumpkin halves with their cut sides down onto the baking sheet and bake for about fifty minutes. After baking, remove them from the oven and let them cool for about ten minutes.

Once it’s cool enough to handle, scoop the flesh from the pumpkin and put it in a food processor. You can toss the shell or keep it for other projects, your call! Next, add the apple cider to the food processor and start processing. This should take about one minute to get smooth.

Next, add the honey, cinnamon, ginger, vinegar, nutmeg, cloves and brown sugar to the food processor. Process the mix for about twenty more seconds, until it’s smooth. Then, transfer this mix to a pan for cooking. Bring the mix to a simmer and stir it so it doesn’t burn.

Cook the mixture for about 25 minutes, until it has been reduced by about a third. It should also be much darker in color now. Once it’s done, you can remove it from the heat and let it cool for about thirty minutes.

The pumpkin butter can then be stored in an airtight container, refrigerated, for about two and a half weeks. Enjoy!
