Potato Mozzarella Croquettes


What You’ll Need

2 large potatoes

3 small tomatoes

2 tablespoons of parsley

8 ounces of mozzarella

2 tablespoons extra-virgin olive oil

Salt and Pepper

2 tablespoons of basil

Vegetable oil

1 tablespoon of Dijon mustard

1 cup of bread crumbs

3 large eggs

2 garlic cloves

How to Make

Start by peeling the potatoes and cutting them into large chunks. Then, dice the mozzarella into small pieces. Mince the garlic cloves, then chop the parsley and basil. Next, dice the tomatoes.

Get a pan and add the potatoes and cold water. Boil the potatoes and add a tablespoon of salt. Then, let the potatoes simmer until their tender, which should be between 19 and 22 minutes. Then, drain the potatoes and let them cool off. Next, mash the potatoes and but them in a large bowl. Add the mozzarella, some salt and pepper and the parsley and stir well.

Make the mixture into six or eight croquettes. Put these on a plate, cover them and then put them in the fridge for about half an hour.

Get a medium pan out and add the olive oil to it. Then, warm it over medium heat and add the tomatoes. Stir them while they cook, and after about seven minutes or so add in the basil and some salt and pepper. Then, add the tomatoes to a bowl.

Beat the eggs and mustard together with some salt and pepper and the garlic. Then, place this mix in a short bowl. Get a short bowl and add the bread crumbs. Then, dip the croquettes in the egg mix, then in the bread crumbs. Make sure you knock off the excess and press them to make sure the crumbs stick on well!

Heat about an inch of vegetable oil to three hundred and fifty degrees. Fry the croquettes in batches until they brown and get crisp. This should take about three minutes, just make sure they don’t burn! Once they’re all done, transfer them to plates and serve! Enjoy!
