What You’ll Need
- 3 large bulbs of fennel
- 3/4 cup of olive oil
- Six 6-ounce cod fillets
- 1 lemon
- Salt and pepper
- 3/4 cup panko breadcrumbs
- 3/4 cup green olives
How to Make
Begin by trimming the fronds and bottoms of the fennel bulbs. Set some of the fronds aside for garnish and then cut the fennel into wedges.
Get a large pan that has a good, well-fitting lid and add half a cup of olive oil in it. Heat the oil on high and then add the fennel. Cook it, without stirring, for roughly seven or eight minutes. It should be starting to brown, at which point you’ll begin stirring for about two minutes to get the rest of the pieces to brown.
Add half a cup of water to the pan and add a bit of salt and pepper. Take the heat down to medium and put the lid over the pan. Let this mix cook for about five minutes.
Now, season the cod to your liking with salt and pepper and add it to the pan. Put the cover back on the pan and let the mix simmer. If you need to, you can add more water if the pan is starting to dry. You’ll want to make sure all the cod is cooked through, which should take about six minutes.
Chop the fronds and zest the lemon. Get a medium pan and heat the remaining olive oil in it over high heat. Cook the breadcrumbs for about three minutes in this pan, and then remove from the heat and season to taste with salt and pepper. Let the bread crumbs cool off, and then add the lemon zest and chopped fronds.
Next, chop the olives roughly and juice the lemon. One the cod is done cooking, add the olives and juice to the pan. Stir the mixture well and take the pan off the heat. Give the pan about a minute to cool down, and then transfer the contents to bowls. Add the breadcrumbs and any excess juices from the pan to the fish. Serve warm and enjoy!
