Many vegans or vegetarians are actually quite fond of the tastes and flavors of meat. However, their issues with it are often health or ethics related. As such, vegan recipes that emulate the flavors or textures of common meat dishes are really popular.

Jackfruit Pulled Pork Sandwiches
Part 1: The Jackfruit
- 1 chopped onion
- 2 cloves of minced garlic
- 2 20 oz cans young green jackfruit in brine or water
- 3/4 cup BBQ-sauce
- 1/4 cup vegetable broth
- 1/2 teaspoon of cumin
- 1/2 teaspoon of liquid smoke
- 2 teaspoons of paprika powder
- 2 teaspoons of brown sugar
- 1 pinch of red pepper flakes
Prep the jackfruit by rinsing it and draining it. Stir in all the spices and evenly coat the jackfruit pieces. Get a medium pan and heat the olive oil at medium heat. Next, you’ll sautee the onions until they’re translucent. This will usually take about three minutes. Add the garlic and cook it for another minute.
Next, add and cook the jackfruit for around 3 minutes. Add the BBQ sauce and then the liquid smoke. Add the vegetable broth and cook for around 15 minutes. Shred the jackfruit, using a fork or knife. This will create the pork-like texture.
Part 2: Vegan Ranch
- 1 tablespoon of finely chopped parsley
- 1/2 cup of vegan mayonnaise
- 1 tablespoon of soy milk
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
While cooking the jackfruit, make the vegan ranch by combining all of the ingredients in a small bowl and mixing with a whisk.
Part 3: Assemble the Sandwiches and Serve
Once the jackfruit is cooked and shredded, serve it on a bun with tomato, lettuce and avocado. Make sure you add the ranch, too! Pair with a light lager for a delicious summertime dish!
