Chicken doesn’t have to be boring! There are a ton of healthy things you can add to chicken to make it delicious and healthy, without the grease.
This recipe for grilled chicken caprese is the perfect example of that.
What You’ll Need
- Olive Oil
- 4 Chicken Breasts
- Fresh Basil
- 1 Large Tomato
- 1/3 Cup Balsamic Vinegar
- 4 Slices Fresh Mozzarella
- Salt and Pepper
Grill the Chicken
Let the chicken come to room temperature prior to grilling. Light the grill and allow the charcoals to burn until they are an ashy-gray color on the outsides. Spread the charcoals as even as possible to ensure the breasts cook at the same rate. Oil or spray the grill grate with non-stick cooking spray.
Lightly baste each side of chicken with olive oil. Salt and pepper the breasts and place them on the grill. Close the lid to allow the chicken to roast slowly ensuring the inside of the chicken gets done before the outside becomes too charred.
When the chicken is done (internal temperature of the chick should read about 160 degrees), move it an upper rack or the area of the grill with the last amount of charcoal.
Place one slice of mozzarella cheese on top of each breast. Lightly oil each side of the sliced tomatoes and place directly above the charcoals. Sear the tomatoes for about 1 to 2 minutes on each side.
Make The Balsamic Reduction Sauce
When the chicken is about ½ way done, simmer the balsamic vinegar. The vinegar will become thicker as it reduces. Simmer for about 10-15 minutes until desired thickness is achieved, stirring every few minutes.
Put it Together
Top the chicken/mozzarella with one tomato each. Add fresh basil to each breast. Drizzle with the sauce and serve.
This meal is not only easy to make, but easy to clean up! Serve the caprese chicken with rice or a salad for a complete meal!
