Lemon Orzo Recipes
What You’ll Need
1 cup of orzo
1/2 tablespoon of paprika
2 tablespoons of olive oil
1 teaspoon of dried mint
How to Make
First, zest and juice the lemon. Then, chop the scallions. Next, get a medium saucepan and add two and a half cups of water. Then, add the orzo, olive oil, paprika, mint, a teaspoon of salt and a few strips of the lemon zest to the mix and simmer.
Allow this mixture to simmer for about thirteen or fourteen minutes, until the orzo has become tender. Remove the pan from the heat and allow it to cool a bit. Add the chopped scallions and the lemon juice once it’s cooler.
Finally, salt to taste and serve warm or chilled, to taste. Enjoy as a side with your favorite fall entrees!
