If you’re like me, there’s something special about “accidentally” vegan recipes. While not everyone is vegan, everyone can appreciate delicious recipes that just happen to have no animal products. Now, that’s not to say that this banana bread is good for you, but at least no animals were harmed to make it! Now, let’s make some delicious, guilt-free banana bread!
Banana Bread Recipe
What You’ll Need
- 1 cup of flour
- 1 teaspoon of baking soda
- Cooking spray
- 1/3 teaspoon of salt
- 2 bananas, preferable very ripe
- 1/3 cup of vegetable oil
- 1/2 cup sugar
- One teaspoon of vanilla extract
- 1/3 cup of soy milk yogurt
How to Make it
Start by getting the oven preheated to 350 degrees. While it’s heating up, get a loaf pan and line it with parchment paper. Leave a bit of overhand on the long sides of the pan and coat it with the cooking spray. Then, mash the bananas thoroughly.
Next, get a medium bowl out. Add the salt, baking soda and flour and whisk them together. Next, in another bowl, add the yogurt, vegetable oil, bananas, sugar and vanilla extract and whisk them as well. Once the wet and dry bowls are both mixed, carefully fold them together with a spatula until you have a batter. A few lumps are okay!
Once the batter is ready, put it in the loaf pan and then pop it in the oven. You’ll bake this for about an hour, or until a loaf tester comes out clean. Don’t be afraid to use foil to tent the loaf if it looks like it’s turning brown too quickly!
Once it’s been baked, let it cool on a rack for about half an hour. After that, carefully lift it by the overhanging parchment and let it finish cooling. If you store the banana bread in an airtight container it can be kept for up to five days at room temperature!
